Ingredients
  

  • 2 eggs
  • 100 g 1/2 cup sugar
  • 80 ml 1/3 cup sunflower oil
  • Zest of 1 lemon
  • 50 ml 3 tablespoons lemon juice
  • 380 g 3 cups all-purpose flour
  • 12 g 2 1/2 teaspoons baking powder

Method
 

  1. Preheat the oven to 180°C (350°F) and line a baking sheet with parchment paper.
  2. In a large bowl, whisk together the eggs and sugar until light and slightly frothy.
  3. Add the sunflower oil, lemon zest, and lemon juice. Mix until well combined.
  4. Gradually sift in the flour and baking powder, stirring until a soft dough forms. Avoid overmixing.
  5. Roll small portions of dough into balls and place them on the prepared baking sheet, leaving space between each biscuit.
  6. Bake for 12–15 minutes, or until the biscuits are lightly golden on the edges.
  7. Let them cool slightly before serving. Enjoy warm or at room temperature!

Notes

  • If you prefer a stronger lemon flavor, add an extra teaspoon of zest or a dash of lemon extract.
  • Store in an airtight container at room temperature for up to 3–4 days.
  • For a decorative touch, dust with powdered sugar or drizzle with a light lemon glaze.
  • The dough can be made in advance and refrigerated for up to 24 hours before baking.
