In a large bowl, whisk together the eggs and sugar until light and slightly frothy.
Add the sunflower oil, lemon zest, and lemon juice. Mix until well combined.
Gradually sift in the flour and baking powder, stirring until a soft dough forms. Avoid overmixing.
Roll small portions of dough into balls and place them on the prepared baking sheet, leaving space between each biscuit.
Bake for 12–15 minutes, or until the biscuits are lightly golden on the edges.
Let them cool slightly before serving. Enjoy warm or at room temperature!
