Ingredients
  

  • 4 boneless chicken thighs2 teaspoons olive oil3 tablespoons harissa powder1 teaspoon smoked paprika½ teaspoon ground cumin¼ teaspoon cayenne pepper1 tablespoon lemon juice

Method
 

  1. In a small bowl, mix together the olive oil, harissa powder, lemon juice, smoked paprika, ground cumin, and cayenne pepper until a thick paste forms.
  2. Rub the marinade evenly over the chicken thighs or place everything in a zip-top bag or bowl and mix thoroughly to coat. Let the chicken marinate for at least 1 hour in the refrigerator for best flavor.
  3. Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper or foil.
  4. Arrange the marinated chicken thighs in a single layer on the baking sheet.
  5. Bake for 18 to 20 minutes or until the internal temperature of the chicken reaches 165°F (75°C).
  6. Remove from the oven and let rest for 5 minutes before serving to lock in the juices.

Notes

You can use bone-in thighs or drumsticks, but increase the cooking time slightly.
For even deeper flavor, marinate overnight.
Serve with a cucumber yogurt dip, cauliflower rice, or grilled vegetables for a balanced low-carb meal.
