Method
 

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C).
  2. In a large mixing bowl, combine the ground beef, chopped onion, cilantro, jalapeño, minced garlic, ground cumin, chili powder, smoked paprika, salt, and pepper. Mix gently for 2-3 minutes.
  3. Fold in the shredded cheddar cheese and crushed tortilla chips. Avoid overmixing.
  4. Add the beaten egg and mix until just combined to bind the mixture.
  5. Roll tablespoon-sized portions into uniform balls, about 1–1.5 inches in diameter.
  6. In a skillet, heat olive oil over medium heat and sear the meatballs for approximately 5 minutes, turning occasionally until golden-brown.
  7. Pour the Mexican-style tomatoes with green chilies around the meatballs and simmer for a couple of minutes.
  8. Transfer the skillet to the preheated oven and bake for 15 to 20 minutes until the internal temperature reaches 160°F (71°C).
  9. Garnish with fresh lime wedges and serve warm.

Notes

Avoid overmixing the meatball mixture to keep them tender. Shape into consistent sizes for even cooking.
