Ingredients

Pickling Mixture
  • 2 cups fresh garlic cloves peeled
  • 2 cups water filtered or boiled
  • 2 cups vinegar white or apple cider
  • 2 tablespoons kosher salt
  • 1 teaspoon red pepper flakes adjust for heat

Equipment

  • Medium saucepan
  • sterilized jars
  • tongs
  • boiling water
  • dishwasher

Method

Preparation Steps
  1. Start by peeling the fresh garlic cloves, ensuring they are firm and free from blemishes.
  2. In a medium saucepan, combine water and vinegar with salt and red pepper flakes. Heat over medium-high, stirring until salt dissolves, and boil for 2-3 minutes.
  3. Sterilize your jars by placing them in boiling water for 10 minutes or running them through a hot dishwasher cycle.
  4. Pack the prepared garlic cloves tightly into each jar, leaving space at the top for brine.
  5. Pour the hot pickling mixture over the garlic, submerging all cloves while leaving half an inch headspace.
  6. Seal each jar tightly and let cool to room temperature for about 30 minutes before refrigerating.
  7. Refrigerate for at least one week to allow flavors to develop.

Notes

For a richer taste, allow the garlic to pickle for two weeks instead of one. Store in a sealed jar in the refrigerator for several months, or freeze for up to 6 months.
