Ingredients
  

For the Cookie Dough
  • 2 cups All-Purpose Flour can substitute with gluten-free flour
  • 1 tbsp Baking Powder ensure it's fresh
  • 1/2 tsp Salt can swap for sea salt
  • 1 cup Unsalted Butter softened, can use coconut oil or vegan butter
  • 3/4 cup Granulated Sugar can use brown sugar for deeper flavor
  • 1 large Egg can substitute with a flax egg for vegan version
  • 1 tbsp Vanilla Extract pure vanilla preferred
  • 1 tbsp Orange Gel Food Coloring optional for visual pop
For the Chocolate Filling
  • 1 cup Milk Chocolate can swap with dark or white chocolate
  • 1/2 cup Heavy Cream can use coconut cream for dairy-free
For Decorating
  • Green Icing or Candy optional for pumpkin stems

Method
 

Make Dough
  1. In a large mixing bowl, whisk together the all-purpose flour, baking powder, and salt.
  2. In a separate bowl, cream the softened unsalted butter and granulated sugar until light and fluffy for 3-5 minutes.
  3. Beat in the large egg and vanilla extract, then add the orange gel food coloring.
  4. Gradually stir in the dry ingredients until just combined.
Chill Dough
  1. Divide the cookie dough into two equal disks and wrap tightly in plastic wrap. Refrigerate for at least 30 minutes.
Preheat Oven
  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
Roll and Cut
  1. Roll out the chilled dough on a floured surface to about ¼ inch thick and cut with a pumpkin-shaped cookie cutter.
  2. Carve jack lantern faces on half of the cookies with a small knife or toothpick.
Bake
  1. Bake for 8-10 minutes until edges are golden and centers are soft. Cool on sheets for a few minutes before transferring to a wire rack.
Prepare Filling
  1. Combine milk chocolate and heavy cream in a microwave-safe bowl and microwave in 20-second intervals until smooth.
Assemble
  1. Spread melted chocolate filling on the flat side of solid cookies and top with carved cookies to make sandwiches.
Decorate
  1. Use green icing or candies to add pumpkin stems on jack lantern cookie tops if desired.

Notes

Chill the dough thoroughly to maintain shape and prevent spreading. Check that baking powder is fresh for best results.
