Ingredients
  

  • 2 cups mixed salad greens
  • 1 cup baby spinach
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber diced
  • 1/2 cup red bell pepper diced
  • 1/4 cup red onion thinly sliced
  • 1/2 cup shredded carrots
  • 1/4 cup feta cheese crumbled
  • 1/4 cup walnuts chopped
  • 1/4 cup balsamic vinaigrette

Method
 

  1. In a large salad bowl, combine the mixed salad greens and baby spinach.
  2. Add the cherry tomatoes, cucumber, red bell pepper, red onion, and shredded carrots to the bowl.
  3. Gently toss the vegetables together until well mixed.
  4. Sprinkle the crumbled feta cheese and chopped walnuts over the top of the salad.
  5. Drizzle the balsamic vinaigrette over the salad just before serving and toss lightly to coat.
  6. Serve immediately for the freshest flavor and crunch.

Notes

  • For a heartier salad, add grilled chicken or chickpeas for extra protein.
  • You can substitute the feta cheese with goat cheese or omit it for a dairy-free version.
  • If you prefer a sweeter dressing, try using a honey mustard vinaigrette instead of balsamic.
