In a blender or food processor, combine the cottage cheese, sliced strawberries, honey (or maple syrup), vanilla extract, and lemon juice. Blend until smooth and creamy.
In a separate bowl, whip the heavy cream until soft peaks form.
Gently fold the whipped cream into the strawberry cottage cheese mixture until well combined. Be careful not to deflate the whipped cream.
Spoon the mousse into serving dishes or glasses and refrigerate for at least 1 hour to chill and set.
Before serving, garnish with additional fresh strawberries and mint leaves.
