Method
 

Step-by-Step Instructions
  1. Preheat your oven to 450°F (232°C) and line a large baking sheet with parchment paper.
  2. French the drumettes by cutting away the meat at one end and scraping the bone clean.
  3. In a large bowl, combine cornstarch, baking soda, and salt. Dip each drumette into the mixture.
  4. Place the coated drumettes upright on the baking sheet and bake for about 30 minutes.
  5. Mix chili garlic sauce, honey, melted butter, soy sauce, and smoked paprika in a bowl for the sauce.
  6. Dip each baked drumette into the sauce and return them to the baking sheet.
  7. Bake again for 10 minutes for extra crispiness, then double dip in remaining sauce before a final 5-minute bake.
  8. Serve warm on a platter with your favorite dipping sauces.
