- Preheat your oven to 450°F (232°C) and line a large baking sheet with parchment paper.
- French the drumettes by cutting away the meat at one end and scraping the bone clean.
- In a large bowl, combine cornstarch, baking soda, and salt. Dip each drumette into the mixture.
- Place the coated drumettes upright on the baking sheet and bake for about 30 minutes.
- Mix chili garlic sauce, honey, melted butter, soy sauce, and smoked paprika in a bowl for the sauce.
- Dip each baked drumette into the sauce and return them to the baking sheet.
- Bake again for 10 minutes for extra crispiness, then double dip in remaining sauce before a final 5-minute bake.
- Serve warm on a platter with your favorite dipping sauces.
