  • 2 tablespoons sugar feeds the yeast
  • 2 teaspoons salt enhances flavor
  • 1.5 cups warm water about 110°F
  • 2 tablespoons olive oil can substitute with melted butter
For the Filling
  • 4 cloves garlic minced
  • 1/4 cup fresh parsley chopped
  • 2 tablespoons fresh rosemary chopped
  • 2 cups shredded cheese mozzarella or cheddar

Method
 

Preparation Steps
  1. Combine warm water, sugar, and yeast in a large bowl. Let sit for 5 to 10 minutes until frothy.
  2. Whisk in olive oil and salt. Gradually mix in flour until a tacky dough forms. Knead for 8 to 10 minutes.
  3. Place dough in a lightly oiled bowl, cover, and let rise for about 1 hour until doubled.
  4. Prepare filling by mixing garlic, parsley, rosemary, and cheese in a medium bowl.
  5. Punch down the dough and roll out into a 12x18 inch rectangle. Spread filling evenly.
  6. Roll dough tightly into a log shape and pinch edges to seal.
  7. Transfer rolled dough seam-side down into a greased loaf pan. Cover and let rise for 30 to 45 minutes.
  8. Preheat oven to 375°F (190°C).
  9. Bake for 25 to 30 minutes until golden-brown and sounds hollow when tapped.
  10. Cool in pan for 10 minutes, then transfer to a wire rack before slicing.

Store leftovers in an airtight container or freeze for later use. Reheat in toaster or oven.
