  • 17.6 oz 500 g potatoes
  • 1 egg
  • Breadcrumbs to coat
  • Salt to taste
  • Paprika to taste
  • 3.5 oz 100 g cheese (grated)
  • Fresh parsley to taste
  • 2 tablespoons cornstarch
  • Fresh green onions to taste

Method
 

  1. Prepare the Potatoes: Peel and cut the potatoes into bite-sized cubes. Boil them in salted water until soft and easily pierced with a fork. Drain and let cool slightly.
  2. Mash the Potatoes: Once cooled, mash the potatoes until smooth, keeping the texture slightly firm but creamy.
  3. Mix Ingredients: Add 1 egg, salt, paprika, cornstarch, grated cheese, chopped parsley, and green onions to the mashed potatoes. Mix well until everything is fully incorporated.
  4. Form Patties: Shape the potato mixture into small patties or discs.
  5. Coat with Breadcrumbs: Dip each patty into breadcrumbs, ensuring it is evenly coated.
  6. Fry the Patties: Heat oil in a large skillet over medium heat. Fry the patties until golden and crispy on both sides, about 3-4 minutes per side.
  7. Drain and Serve: Once fried, place the patties on paper towels to drain excess oil. Garnish with more fresh parsley and serve warm.

Notes

  • Make-Ahead Option: You can form the patties in advance and refrigerate them for up to 24 hours before frying. This helps them hold their shape better during cooking.
  • Freezing: Freeze the formed patties on a baking sheet, then store them in an airtight container. Fry from frozen when you're ready to cook them.
