Ingredients
Method
Prepare the Tortillas:
- Microwave half of the tortillas for about 15 seconds to make them pliable. Cover the remaining tortillas with a clean tea towel to keep warm.
2. Layer the Ingredients:
- Place a tortilla on a flat surface.
- Add a layer of shredded cheese down the middle.
- Spoon ⅓ cup of shredded beef on top of the cheese.
- Add a few spoonfuls of corn kernels, black beans, and ¼ cup of rice.
3. Roll the Burrito:
- Fold the sides of the tortilla inward, then roll it tightly from bottom to top. Wrap the burrito in foil to secure it.
4. Heat and Serve:
- For immediate serving, heat a skillet over medium heat. Cook each burrito for 4–5 minutes per side until the tortilla is golden and the filling is heated through.
- For a crispier finish, use a small amount of oil in the skillet while cooking.
Notes
- Storage Tips:
- Refrigerate burritos wrapped in foil or plastic wrap in an airtight container for up to 3 days.
- Freeze burritos for up to 3 months. Wrap them individually in foil and place them in a freezer-safe bag or container.
- Reheating Options:
- From Frozen: Bake at 350°F (180°C) with foil on for 40–45 minutes.
- From Thawed: Reheat in a skillet as per the initial cooking instructions.
- Microwave: Remove foil and heat until warmed through (though the tortilla may soften).
- Customization Ideas:
- Add diced bell peppers, jalapeños, or avocado slices.
- Swap shredded beef for chicken, pork, or seasoned tofu for a vegetarian option.
- Use whole-wheat tortillas or low-fat cheese for a healthier version.
