Ingredients
  

  • 2 ounces light rum
  • 1 ounce blue curaçao
  • 1 ounce coconut cream
  • 1 ounce pineapple juice
  • 1 ounce fresh lime juice
  • Ice
  • Pineapple slice and maraschino cherry for garnish

Method
 

  1. In a cocktail shaker, combine the light rum, blue curaçao, coconut cream, pineapple juice, and fresh lime juice.
  2. Fill the shaker with ice and shake vigorously for about 15 seconds until well chilled.
  3. Strain the mixture into a chilled cocktail glass or a highball glass filled with ice.
  4. Garnish with a slice of pineapple and a maraschino cherry on top.

Notes

  • For a creamier texture, use coconut milk instead of coconut cream.
  • For a non-alcoholic version, replace the rum and blue curaçao with additional pineapple juice and a splash of soda water for fizz.
