  1. Prepare the Surimi Sticks: Pat them dry with paper towels until tacky.
  2. Season the Sticks: Combine cornstarch, salt, and white pepper. Toss surimi sticks until evenly coated.
  3. Set Up the Breading Station: Prepare one bowl with beaten eggs and another with Panko mixture.
  4. Bread the Surimi Sticks: Dip in eggs and press into Panko mixture until fully coated.
  5. Heat the Oil: Heat avocado oil over medium-high heat to 350°F (175°C).
