Method
 

Preparing the Latte
  1. Make the raspberry puree by blending fresh or frozen raspberries until smooth. Strain through a fine sieve and chill for at least 30 minutes.
  2. Brew espresso or strong coffee and let it cool to room temperature (15-20 minutes).
  3. In a tall glass, pour chilled raspberry puree evenly across the bottom.
  4. Add a generous amount of ice cubes to the glass, filling it about three-quarters full.
  5. Pour your choice of milk over the ice and raspberry mixture. Stir gently to blend the raspberry and milk.
  6. Slowly pour in the cooled espresso or coffee over the back of a spoon to create layers.
  7. Garnish with whipped cream, fresh raspberries, or crushed freeze-dried raspberries and serve immediately.
