Cooking Instructions
- Rinse 1 cup of brown rice under cold water and cook it according to package instructions, typically about 30-40 minutes.
- In a large pot, bring 4 cups of water to a rolling boil. Add diced yellow onion, peeled and cubed potato, and chopped carrot. Cook for 15-20 minutes until tender.
- In a high-powered blender, combine boiled vegetables, soaked cashews, nutritional yeast, Dijon mustard, garlic, and a pinch of salt and black pepper. Add in 1 cup of the reserved cooking water. Blend until smooth.
- In the same large pot, add drained rice and chopped broccoli florets to the blended cheese sauce. Stir until evenly coated and cook on low heat for about 5 minutes.
- Serve warm, adjusting seasonings if necessary, and enjoy your Vegan Cheesy Broccoli and Rice.
Notes
For best results, ensure vegetables are fully tender before blending and use a high-powered blender for a creamy sauce. If making ahead, store the cheese sauce separately.
