Ingredients
  

For the Casserole
  • 4 cups Water for boiling vegetables
  • 1 cup Brown Rice can substitute with white rice
  • 1 medium Yellow Onion diced
  • 1 medium Potato peeled and cubed
  • 1 medium Carrot optional, chopped
  • 2 cups Broccoli Florets chopped
For the Cheese Sauce
  • 1 cup Cashews soaked for a few hours
  • 1/4 cup Nutritional Yeast
  • 1 tablespoon Dijon Mustard
  • 2 cloves Garlic fresh or powdered
  • to taste Salt
  • to taste Black Pepper

Method
 

Cooking Instructions
  1. Rinse 1 cup of brown rice under cold water and cook it according to package instructions, typically about 30-40 minutes.
  2. In a large pot, bring 4 cups of water to a rolling boil. Add diced yellow onion, peeled and cubed potato, and chopped carrot. Cook for 15-20 minutes until tender.
  3. In a high-powered blender, combine boiled vegetables, soaked cashews, nutritional yeast, Dijon mustard, garlic, and a pinch of salt and black pepper. Add in 1 cup of the reserved cooking water. Blend until smooth.
  4. In the same large pot, add drained rice and chopped broccoli florets to the blended cheese sauce. Stir until evenly coated and cook on low heat for about 5 minutes.
  5. Serve warm, adjusting seasonings if necessary, and enjoy your Vegan Cheesy Broccoli and Rice.

Notes

For best results, ensure vegetables are fully tender before blending and use a high-powered blender for a creamy sauce. If making ahead, store the cheese sauce separately.
