Ingredients

  • 16 oz Cream Cheese room temperature
  • 1 cup Granulated Sugar or sugar alternative
  • 1 tbsp Vanilla Extract preferably pure
  • 1 tbsp Lemon Zest fresh zest is optimal
  • 3 large Eggs room temperature
For the Crust
  • 1.5 cups Graham Cracker Crumbs gluten-free if needed
  • 6 tbsp Butter unsalted, melted
For the Topping
  • 2 cups Fresh Strawberries ripe seasonal berries
  • 1 cup Strawberry Glaze made from fresh or frozen strawberries

Method
 

Prepare the Crust
  1. Preheat oven to 350°F (175°C). Combine graham cracker crumbs with melted butter and press into a 9-inch springform pan. Bake for 10 minutes until golden. Cool.
Make the Filling
  1. Beat cream cheese and sugar until smooth. Add vanilla, lemon zest, and eggs one at a time, mixing well after each addition.
Bake the Cheesecake
  1. Pour filling over crust and smooth. Bake at 325°F (160°C) for about 60 minutes until slightly jiggly in the center.
Chill the Cheesecake
  1. Let the cheesecake cool at room temperature for 1 hour, then refrigerate overnight.
Prepare the Glaze
  1. Blend fresh strawberries for the glaze, strain if desired, and pour over the chilled cheesecake before serving.
