- Preheat your air fryer or oven to 400°F (200°C). If frying, heat vegetable oil in a large pot over medium heat.
- Cut fresh corn on the cob into bite-sized pieces and pat them dry with paper towels.
- In a large mixing bowl, combine melted butter, Cajun seasoning, garlic powder, paprika, salt, and pepper. Toss the corn pieces in the mixture.
- If using an air fryer, cook the corn pieces in a single layer for about 15 minutes, shaking halfway through. For frying, fry until golden brown.
- Sprinkle more Cajun seasoning or squeeze fresh lime juice over the crispy corn before serving.
- Serve warm, on its own or with dipping sauces.
