In a large mixing bowl, combine the Greek yogurt, almond flour, baking powder, baking soda, and salt. Mix until well combined.
In a separate bowl, whisk together the olive oil and eggs until smooth. If using, stir in the garlic powder and dried herbs.
Pour the egg mixture into the yogurt mixture and stir until fully incorporated. The batter will be thick.
Transfer the batter to the prepared loaf pan, smoothing the top with a spatula.
Bake in the preheated oven for 40-45 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.
Allow the bread to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
