- Heat 1 tablespoon of avocado or olive oil in a small saucepan over medium heat. Add finely chopped red onion and minced garlic, cooking for about 5 minutes until softened and golden.
- Once ready, add in 2 cups of rinsed and drained pre-cooked butter beans and pour in 1 cup of creamy coconut milk. Squeeze in the juice of half a lemon, followed by 1 teaspoon each of ground turmeric, smoked paprika, dried oregano, and a pinch of black pepper. Stir until well combined.
- Bring the mixture to a gentle simmer over medium heat while stirring continuously. Allow it to cook for about 5 minutes until creamy.
- Once creamy, remove from heat and garnish with red chili flakes and hemp seeds. Serve warm.
Notes
Use full-fat coconut milk for the richest results. Fresh garlic is recommended for optimal flavor.
