- Begin by shredding your chicken, baking seasoned chicken tenders at 400°F for 15-18 minutes if making from scratch.
- Finely dice ½ cup of celery and ¼ cup of red onion; chop a handful of cilantro.
- In a separate bowl, whisk together mayo, Greek yogurt, lime juice, chipotle pepper, adobo sauce, garlic, smoked paprika, salt and pepper until creamy.
- Pour the dressing over the chicken and vegetables, gently fold together until well coated.
- Serve immediately with tortilla chips, in a sandwich or wrap, or over greens.
