  • 1/4 cup Plain Greek Yogurt for added protein
  • 2 tablespoons Lime Juice juice from 2 limes
  • 1 whole Chipotle Pepper in Adobo Sauce adjust to spice tolerance
  • 1 tablespoon Adobo Sauce from the chipotle can
  • 1 clove Garlic minced
  • 1 teaspoon Smoked Paprika adds a smoky note

Method
 

Step-by-Step Instructions
  1. Begin by shredding your chicken, baking seasoned chicken tenders at 400°F for 15-18 minutes if making from scratch.
  2. Finely dice ½ cup of celery and ¼ cup of red onion; chop a handful of cilantro.
  3. In a separate bowl, whisk together mayo, Greek yogurt, lime juice, chipotle pepper, adobo sauce, garlic, smoked paprika, salt and pepper until creamy.
  4. Pour the dressing over the chicken and vegetables, gently fold together until well coated.
  5. Serve immediately with tortilla chips, in a sandwich or wrap, or over greens.
