  • 1 teaspoon Salt
  • 1 teaspoon Pepper adjust to taste
  • 1/2 teaspoon Onion Powder optional

Method
 

Step-by-Step Instructions
  1. Finely shred about 4 cups of cabbage and chop one cucumber and two stalks of celery into bite-sized pieces. Pat the cucumber pieces dry.
  2. Finely chop about 1/4 cup of fresh herbs like cilantro or parsley.
  3. In a large mixing bowl, whisk together 1 cup of mayonnaise, 2 tablespoons of apple cider vinegar, and 1 teaspoon each of salt and pepper. Add 1/2 teaspoon of onion powder.
  4. Add the shredded cabbage, chopped cucumber, chopped celery, and freshly chopped herbs into the dressing and toss until coated.
  5. Transfer the coleslaw to an airtight container and chill for at least one hour.
  6. Once chilled, stir the coleslaw before serving and drain excess liquid if necessary.

Notes

Serve cold as a refreshing side dish. Best when made ahead and chilled to let flavors meld.
