- Finely shred about 4 cups of cabbage and chop one cucumber and two stalks of celery into bite-sized pieces. Pat the cucumber pieces dry.
- Finely chop about 1/4 cup of fresh herbs like cilantro or parsley.
- In a large mixing bowl, whisk together 1 cup of mayonnaise, 2 tablespoons of apple cider vinegar, and 1 teaspoon each of salt and pepper. Add 1/2 teaspoon of onion powder.
- Add the shredded cabbage, chopped cucumber, chopped celery, and freshly chopped herbs into the dressing and toss until coated.
- Transfer the coleslaw to an airtight container and chill for at least one hour.
- Once chilled, stir the coleslaw before serving and drain excess liquid if necessary.

Serve cold as a refreshing side dish. Best when made ahead and chilled to let flavors meld.
