Ingredients
  

For the Cookie Dough:
  • cups 300g flour
  • A pinch of salt
  • ½ teaspoon baking powder
  • 1 teaspoon vanilla sugar
  • 5 tablespoons 100g butter, softened
  • cup 150g sour cream
  • 1 egg
For the Orange Filling:
  • 2 oranges 450g, peeled and finely chopped
  • ½ cup 100g sugar
  • 2 tablespoons 30g cornstarch

Method
 

Prepare the Dough:
  1. In a bowl, mix the flour, salt, baking powder, and vanilla sugar.
  2. Add the butter and rub it into the flour until the mixture is crumbly.
  3. Stir in the sour cream and egg, then knead into a smooth dough. Cover and refrigerate for 30 minutes.
Make the Orange Filling:
  1. In a saucepan over medium heat, cook the chopped oranges with sugar until soft.
  2. Stir in the cornstarch and continue cooking until the mixture thickens. Let it cool completely.
Shape the Cookies:
  1. Preheat the oven to 180°C (350°F) and line a baking sheet with parchment paper.
  2. Roll out the dough to about ¼-inch thickness and cut into circles or desired shapes.
  3. Spoon a small amount of the orange filling onto half of the cookies, then top with another cookie and press the edges to seal.
Bake to Perfection:
  1. Place the cookies on the baking sheet and bake for 15-18 minutes, or until golden brown.
Cool & Serve:
  1. Allow the cookies to cool before serving. Enjoy with tea, coffee, or a dusting of powdered sugar!
