  • 10 dark meat chicken pieces (drumsticks and thighs, trimmed of excess fat)
  • 2 tsp kosher salt
  • 1 tbsp smoked paprika
  • 1 tbsp Montreal chicken seasoning (or any preferred chicken seasoning, including bouillon)
  • 2 tbsp butter
  • 1/2 cup red onion, minced
  • 1/2 cup flat-leaf parsley, chopped
  • 1 tbsp garlic, minced
  • 1/2 tsp red pepper flakes
  • 1 cup chicken stock
  • 1 tbsp fresh lemon juice
  • 1 cup freshly grated Parmesan cheese
  • 1/3 cup heavy whipping cream

Instructions

  1. Preheat the oven to 375°F.
  2. Melt butter in a skillet over medium heat.
  3. Add minced onions and sauté until fragrant (about 2 minutes).
  4. Stir in chopped parsley and garlic, mixing well.
  5. Add lemon juice and red pepper flakes, followed by chicken stock.
  6. Stir in Parmesan cheese and heavy cream, letting it simmer for a minute. Turn off the heat and allow the sauce to cool slightly.
  7. While the sauce cools, season the chicken with salt, smoked paprika, and chicken seasoning. Toss to coat evenly.
  8. Place the seasoned chicken in a baking dish and pour the prepared sauce over it.
  9. Bake uncovered for 1 hour and 45 minutes, flipping halfway through.
  10. Broil on the skin side until golden brown.
  11. Baste the chicken in its sauce before serving.
