Ingredients

Scale
  • 95 ml water
  • 1.5 g (0.25 tsp) salt
  • 150 g (1 cup) flour
  • 30 g green onion, chopped
  • A pinch of baking soda
  • 50 g cheese, grated
  • ¼ cup flour (for dusting)
  • ¼ cup corn starch

Instructions

  1. Prepare the Dough – In a mixing bowl, combine flour, salt, and baking soda. Gradually add water and mix until a dough forms. Knead for 5-7 minutes until smooth, then cover and let rest for 20 minutes.
  2. Incorporate Fillings – Roll out the dough and sprinkle with chopped green onions and grated cheese. Fold the dough over and knead gently to distribute the ingredients evenly.
  3. Shape and Cook – Divide the dough into equal portions and roll each into a flat circle. Dust lightly with corn starch and flour. Heat a pan over medium heat and cook each flatbread for 2-3 minutes per side until golden brown.
  4. Serve and Enjoy – Serve warm with butter, a yogurt dip, or as a side for soups and stews.

Notes

  • For extra crispiness, brush with olive oil or butter before cooking.
  • To make it dairy-free, omit the cheese or use a plant-based alternative.
  • For a spicier version, add chili flakes or black pepper to the dough.
  • Storage – Keep in an airtight container for up to 3 days or freeze for later.
