For the Stuffed Bread

  • 4 eggs
  • Salt, to taste
  • 23 tablespoons sour cream
  • 1 loaf of bread (preferably day-old)
  • 5 cherry tomatoes, chopped
  • 2 tablespoons ketchup or other sauce of choice
  • ½ cup mozzarella cheese, grated
  • 100g salami, sliced
  • 60ml milk
  • Black pepper, to taste
  • 40g Parmesan cheese, grated
  • 1 bunch spring onions, chopped
  • Fresh parsley, for garnish

Instructions

  • Prepare the Bread: Preheat the oven to 180°C (350°F). Cut the top off the bread loaf and hollow out the inside, leaving a sturdy shell.
  • Make the Filling: In a bowl, whisk together eggs, milk, sour cream, salt, and black pepper. Stir in chopped cherry tomatoes, mozzarella, salami, Parmesan cheese, and spring onions.
  • Assemble the Stuffed Bread: Spread ketchup or sauce inside the hollowed-out bread, then pour in the egg mixture.
  • Bake: Place in the oven and bake for 20-25 minutes, or until the filling is set and golden brown on top.
  • Garnish & Serve: Sprinkle with fresh parsley, slice, and serve warm.

Notes

  • For a crispier crust, brush the outside of the bread with olive oil before baking.
  • Try different cheeses like gouda, cheddar, or feta for a new twist.
  • Add extra veggies like bell peppers, mushrooms, or spinach for more flavor.
  • Store leftovers in the fridge for up to 2 days, and reheat in the oven before serving.
