Instructions

Step 1: Prepare the Coffee Mixture

  1. In a medium bowl, dissolve the espresso powder in hot water. Stir in the amaretto and set aside to cool to room temperature.

Step 2: Make the Mascarpone Cream

  1. Fill a saucepan with 1–2 inches of water and bring it to a gentle simmer. In a heatproof bowl, whisk together the egg yolks and granulated sugar. Place the bowl over the simmering water, ensuring it doesn’t touch the water, and whisk constantly for about 5–7 minutes until the mixture thickens and turns pale yellow.
