Easy Homemade Creamy Pastry Recipe

Ingredients

Cream Mixture:
  • 2 large eggs
  • 150 grams of fine vanilla-infused sugar
  • 70 grams of cornflour (cornstarch)
  • 500 ml of whole milk
Dough Preparation:
  • 100 ml of water
  • 100 ml of milk (full fat recommended)
  • A small dash of salt
  • 1 tsp of granulated sugar
  • 80 grams of unsalted butter
  • 120 grams of all-purpose flour
  • 4 large, fresh eggs
Filling Component:
  • 160 grams of creamy, unsalted butter


Directions

For the Cream:

  1. Begin by whisking together the eggs and vanilla sugar in a medium-sized bowl until the mixture is light and fluffy.
  2. Gradually sift in the cornstarch, ensuring to mix thoroughly to avoid any lumps.
  3. In a saucepan, gently heat the milk just until warm – not boiling. Gradually pour the warm milk into the egg mixture, continuously stirring to combine.
  4. Transfer the mixture back into the saucepan. Over low heat, stir the mixture constantly until it thickens into a custard-like consistency. Remove from heat and set aside to cool.

For the Dough:

  1. In a medium saucepan, combine water, milk, a pinch of salt, and sugar. Bring to a gentle simmer.
  2. Add the butter and let it melt completely. Once melted, quickly stir in the flour. Reduce the heat and continue stirring vigorously until the dough forms a ball and pulls away from the sides of the pan.
  3. Remove from heat. Let the dough cool slightly, then beat in the eggs one at a time, ensuring each is fully incorporated before adding the next.
  4. Preheat your oven to 200°C (390°F). On a lined baking sheet, drop spoonfuls of dough, spacing them well apart.
