Ingredients

Scale
  • 1 liter of milk (preferably warm)
  • 45 tablespoons semolina
  • 100g sugar (or to taste)
  • Zest and juice of 1 whole lemon
  • 100g soft butter (room temperature)
  • 1 teaspoon vanilla extract (optional)
  • Cognac or rum for flavoring (optional)

Instructions

  1. Cook the Semolina Cream:

    • In a saucepan over medium heat, bring the milk to a gentle simmer.
    • Gradually whisk in the semolina, stirring continuously to prevent lumps.
    • Cook for 5–7 minutes until the mixture thickens.
  2. Add Flavor and Creaminess:

    • Stir in the sugar until fully dissolved.
    • Add the lemon zest, lemon juice, and vanilla extract (or cognac/rum if using).
    • Remove from heat and mix in the soft butter until the cream is smooth and glossy.
  3. Serve and Enjoy:

    • Pour the cream into serving bowls or glasses.
    • Serve warm for a cozy treat or refrigerate for a chilled version.
    • Garnish with extra lemon zest or a sprinkle of cinnamon if desired.

Notes

  • For a richer version, replace some of the milk with heavy cream.
  • If serving cold, let the cream cool completely before refrigerating for at least 2 hours.
  • Adjust the sugar based on your preferred level of sweetness.
  • Serve with fresh berries, nuts, or a drizzle of honey for extra flavor.
