- Preheat oven to 400°F (200°C). Roll out chilled puff pastry to about 1/8-inch thickness and stamp out 2 to 3-inch circles.
- Chill the circles on a parchment-lined baking sheet for 10-15 minutes to keep them cold.
- Press a smaller cutter in the center of each circle to create a rim and poke holes for steam release.
- Whisk one egg and brush the outer edge of each circle with egg wash. Chill again for 10 minutes.
- Pipe or spoon jam into the center of each circle and top with small pieces of Brie.
- Bake for 15-20 minutes until golden brown, then bake for an additional 5 minutes to melt the Brie.
- Let cool for a couple of minutes and garnish with thyme or chives if desired.
Notes
Best served fresh from the oven, but leftovers can be stored in an airtight container for up to 3 days.
