Preparation Steps
- In a small saucepan, combine sake and mirin over medium heat, boiling for 1-2 minutes. Reduce heat, whisk in white miso paste until smooth, add sugar to dissolve, and cool.
- Place black cod fillets in a shallow dish, pour marinade over the fish, cover and refrigerate for 24-48 hours.
- Preheat the oven to 400°F (200°C) for optimal cooking.
- Remove fillets, dab off excess marinade. Heat vegetable oil in a large skillet over medium-high heat. Sear fish skin-side up for 2-3 minutes until golden.
- Flip the fillets skin-side down, transfer to the oven and bake for 5-8 minutes until fish is opaque and flakes easily.
- Let the fish rest for a couple of minutes before serving.
Notes
Allowing the black cod to soak in marinade for 24-48 hours will deepen flavors. Use high-quality black cod for the best results.
