  • 1/2 cup White Miso Paste Heart of the marinade, can substitute with tahini.
  • 3 tablespoons Granulated Sugar Adjust sweetness based on preference.
For the Black Cod
  • 4 fillets Black Cod Fillets If unavailable, can use salmon or Chilean sea bass.
  • 2 tablespoons Vegetable Oil Choose a neutral oil like canola or sunflower.

Method
 

Preparation Steps
  1. In a small saucepan, combine sake and mirin over medium heat, boiling for 1-2 minutes. Reduce heat, whisk in white miso paste until smooth, add sugar to dissolve, and cool.
  2. Place black cod fillets in a shallow dish, pour marinade over the fish, cover and refrigerate for 24-48 hours.
  3. Preheat the oven to 400°F (200°C) for optimal cooking.
  4. Remove fillets, dab off excess marinade. Heat vegetable oil in a large skillet over medium-high heat. Sear fish skin-side up for 2-3 minutes until golden.
  5. Flip the fillets skin-side down, transfer to the oven and bake for 5-8 minutes until fish is opaque and flakes easily.
  6. Let the fish rest for a couple of minutes before serving.

Notes

Allowing the black cod to soak in marinade for 24-48 hours will deepen flavors. Use high-quality black cod for the best results.
