- Preheat your oven to 300°F (150°C). Line a baking sheet with parchment paper.
- Place the salmon, skin-side down, on the lined baking sheet. Season with kosher salt and black pepper.
- In a saucepan, combine pomegranate juice, brown sugar, fresh orange juice, and orange zest. Heat until boiling.
- Reduce heat and simmer for 20–25 minutes until the mixture thickens to a syrup-like consistency.
- Brush the thickened glaze generously over the salmon, reserving some for serving.
- Bake for 30–38 minutes or until the internal temperature reaches 145°F (63°C).
