  • 3 tablespoons Miso Paste Light miso is preferable
  • 2 tablespoons Mirin Sweet rice wine
  • 1 teaspoon Hot Sauce Tobasco preferred
  • 1 tablespoon Fresh Lemon Juice Always use fresh
Optional Toppings
  • 1 cup Cheddar or Mozzarella Cheese For a cheesy topping
  • Garnish Lemon wedges, chopped parsley, and paprika

Method
 

Step-by-Step Instructions
  1. Preheat your broiler or BBQ grill to high, about 500°F (260°C).
  2. Line a baking sheet with rock salt or kosher salt to stabilize the oyster shells.
  3. In a mixing bowl, combine the Japanese mayonnaise, miso paste, mirin, hot sauce, and lemon juice. Stir until smooth.
  4. Evenly distribute the shredded spinach across the oyster shells.
  5. Place the fresh oysters on top of the spinach layer.
  6. Spoon approximately one tablespoon of the miso sauce over each oyster.
  7. Place the baking sheet under the broiler for 5–8 minutes or until golden.
  8. Remove from the oven and let cool for about 5 minutes, then garnish before serving.
