Steps
- Heat the olive oil in a large pot over medium heat until shimmering, about 1-2 minutes.
- Add the diced apples, sliced carrots, sliced sweet potatoes, onion powder, garlic powder, salt, pepper, rubbed sage, cinnamon, and nutmeg. Sauté for about 5 minutes.
- Add the ground turkey, breaking apart with a spoon, and cook for about 5 minutes until browned.
- Stir in the tomato paste and chili powder, mixing thoroughly, and allow to bloom for about 2 minutes.
- Pour in the crushed tomatoes and strained tomatoes, stirring well, and bring to a gentle simmer. Simmer for about 20-30 minutes.
- If desired, stir in the kidney beans and black beans and allow everything to warm through for an additional 5 minutes.
Notes
Adjust the spice levels and add fresh herbs before serving for a fresher taste. Maintain the crunch of the apples by adding them towards the end of cooking.
