  • ½ cup chopped onion
  • 2 cloves garlic, minced
  • 1 packet (1 oz) taco seasoning
  • ½ cup water
  • 1 cup cooked rice (white, brown, or Spanish rice)
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 4 large flour tortillas
  • 1 cup salsa
  • ½ cup sour cream (for serving)
  • ¼ cup chopped fresh cilantro (optional, for garnish)

Instructions

  1. Cook the Beef Mixture:
    • Heat a skillet over medium heat and cook the ground beef until browned, breaking it up with a spatula.
    • Drain any excess fat and stir in chopped onion and minced garlic. Cook for 2–3 minutes, until the onion is soft.
  2. Season the Beef:
    • Sprinkle taco seasoning over the beef mixture and pour in water.
    • Stir well and let simmer for about 5 minutes, until the sauce thickens.
  3. Prepare the Tortillas:
    • Preheat your oven to 375°F (190°C).
    • Lay the tortillas flat on a clean surface. Divide the cooked rice and beef mixture evenly among the tortillas.
  4. Add the Cheese:
    • Sprinkle shredded cheddar and mozzarella cheese over the beef and rice mixture on each tortilla.
  5. Roll the Burritos:
    • Tightly roll up each tortilla, tucking in the sides as you go to form neat burritos.
    • Place the burritos seam-side down in a parchment-lined baking dish.
  6. Top and Bake:
    • Spread salsa evenly over the top of the burritos.
    • Sprinkle extra cheese on top for a gooey finish.
    • Bake for 20 minutes, or until the cheese is melted and bubbly.
  7. Serve:
    • Let the burritos cool slightly before serving.
    • Garnish with fresh cilantro and serve with sour cream on the side.
