Instructions
- Preheat the oven to 180°C (350°F) and line a baking sheet with parchment paper.
- In a large bowl, whisk together the eggs and sugar until light and slightly frothy.
- Add the sunflower oil, lemon zest, and lemon juice. Mix until well combined.
- Gradually sift in the flour and baking powder, stirring until a soft dough forms. Avoid overmixing.
- Roll small portions of dough into balls and place them on the prepared baking sheet, leaving space between each biscuit.
- Bake for 12–15 minutes, or until the biscuits are lightly golden on the edges.
