  • 100 g (1/2 cup) sugar
  • 80 ml (1/3 cup) sunflower oil
  • Zest of 1 lemon
  • 50 ml (3 tablespoons) lemon juice
  • 380 g (3 cups) all-purpose flour
  • 12 g (2 1/2 teaspoons) baking powder

Instructions

  • Preheat the oven to 180°C (350°F) and line a baking sheet with parchment paper.
  • In a large bowl, whisk together the eggs and sugar until light and slightly frothy.
  • Add the sunflower oil, lemon zest, and lemon juice. Mix until well combined.
  • Gradually sift in the flour and baking powder, stirring until a soft dough forms. Avoid overmixing.
  • Roll small portions of dough into balls and place them on the prepared baking sheet, leaving space between each biscuit.
  • Bake for 12–15 minutes, or until the biscuits are lightly golden on the edges.
  • Let them cool slightly before serving. Enjoy warm or at room temperature!

Notes

  • If you prefer a stronger lemon flavor, add an extra teaspoon of zest or a dash of lemon extract.
  • Store in an airtight container at room temperature for up to 3–4 days.
