These Crispy Parmesan Chicken & Veggie Patties are the perfect balance of juicy, cheesy, and crispy goodness. For the Patties:
- 3 eggs
- Salt, to taste
- Black pepper, to taste
- 2 tablespoons mayonnaise
- 4 tablespoons flour
- Olive oil for frying
For the Filling:
- 400 g (14 oz) ground chicken
- 1/2 cup grated Parmesan cheese
- 1/2 cup shredded mozzarella cheese
- 1 small zucchini, grated and squeezed dry
- 1 small carrot, grated
- 2 tablespoons chopped parsley
- 2 garlic cloves, minced
- 1 teaspoon paprika
- 1/2 teaspoon dried oregano
Instructions
- In a large bowl, combine the ground chicken, Parmesan, mozzarella, zucchini, carrot, parsley, garlic, paprika, oregano, salt, and black pepper. Mix well.
- In a separate bowl, whisk the eggs, mayonnaise, and flour until smooth. Add this mixture to the chicken filling and stir until fully combined.
- Heat olive oil in a skillet over medium heat.
- Scoop a spoonful of the mixture and shape it into a patty. Carefully place it in the skillet.
- Cook each patty for about 3–4 minutes per side until golden brown and fully cooked through.
- Transfer to a paper towel-lined plate to remove excess oil. Serve warm with your favorite dipping sauce.
Notes
- To bake instead of frying, place the patties on a lined baking sheet and bake at 200°C (400°F) for 20–25 minutes, flipping halfway through.
- These patties can be stored in the fridge for up to 3 days or frozen for up to 3 months. Reheat in the oven or a skillet for the best texture.
- Serve with garlic yogurt sauce, spicy aioli, or a fresh salad for a complete meal.
