Start your day with this Spinach & Mozzarella Breakfast Wrap, a perfect blend of fluffy eggs, fresh spinach, melted mozzarella, and juicy tomatoes, all wrapped in a warm, crispy tortilla. Quick, satisfying, and packed with protein, this breakfast wrap is an easy way to fuel your morning!

  • 3 eggs
  • Salt, to taste
  • Black pepper, to taste
  • Red pepper (optional), to taste
  • 2 spring onions, chopped
  • 1 tomato, diced
  • 1 tablespoon butter
  • 1 large tortilla
  • 1/2 cup mozzarella cheese, shredded
  • 1 cup fresh spinach, roughly chopped

Instructions

  1. In a bowl, whisk the eggs with salt, black pepper, and red pepper (if using).
  2. Melt the butter in a skillet over medium heat. Add chopped spring onions and diced tomato, sautéing for 2–3 minutes until softened.
  3. Pour the egg mixture into the skillet, stirring gently until scrambled and cooked through. Remove from heat.
  4. Place the tortilla on a clean surface. Sprinkle half of the mozzarella cheese over one side, then top with scrambled eggs, spinach, and the remaining cheese.
  5. Fold the tortilla in half and return it to the skillet over medium-low heat. Cook for 2–3 minutes per side until golden brown and the cheese is melted.
  6. Slice in half and serve warm.

Notes

  • For extra crispiness, press the wrap gently with a spatula while cooking.
  • Add avocado, feta cheese, or hot sauce for extra flavor.
  • Store leftovers in an airtight container in the fridge for up to 2 days. Reheat in a skillet for the best texture.
  • This wrap can also be frozen. Wrap it tightly in foil and reheat in a skillet or oven when ready to eat.
