  • 2 tablespoons butter (40g), softened
  • 4 tablespoons of oil (40ml)
  • 1 teaspoon baking powder (4g)

For the Apple Filling:
  • 4 apples (500g), peeled and sliced
  • Juice of half a lemon

For the Topping:
  • 4 tablespoons of apricot jam
  • 1 egg yolk mixed with a spoon of milk
  • Chopped almonds or peanuts for sprinkling
  • Sugar icing for decoration

Instructions:

  1. Prepare the Dough:
    • In a large bowl, whisk together the eggs, sugar, and vanilla sugar until well combined. Incorporate the softened butter and oil, mixing until smooth.
    • Sift in the flour and baking powder, folding into the wet ingredients until a soft dough forms. Divide the dough in half and let it rest while you prepare the filling.

    • In a saucepan over medium heat, combine the sliced apples, lemon juice, sugar, and butter. Cook for about 10 minutes, stirring occasionally, until the apples are soft but not mushy. Remove from heat and let it cool slightly.
  3. Assemble the Pie:
    • Preheat your oven to 180°C (350°F) and grease a 26cm pie mold with butter.
    • Roll out one half of the dough to fit the bottom of the mold, including the sides. Spread the apricot jam over the dough, then layer the cooled apple filling on top.
    • Roll out the second half of the dough and place it over the filling, sealing the edges. Brush the top with the egg yolk and milk mixture, then sprinkle with chopped almonds or peanuts.
  4. Bake:
    • Bake in the preheated oven for 30-35 minutes, or until the crust is golden brown and the filling is bubbly.
  5. Final Touches:
    • Allow the pie to cool before drizzling with sugar icing for a sweet finish.
